What do I need?
- 6 sliced wholemeal sandwich bread
- 1 tbsp butter, softened
- 3 rashers bacon, diced
- Salt, to taste
- Freshly ground black pepper, to taste
- 6 eggs
- Fresh parsley, to garnish
How do I make it?
- Preheat oven to 180C.
- Lightly grease a 6-cup muffin pan.
- Trim the crusts off the bread.
- Flatten bread gently with a rolling pin.
- Butter one side lightly, then press the slices butter-side down into the muffin pan to form cups.
- Divide diced bacon evenly among the toast cups.
- Crack one egg into each cup and season with salt and pepper.
- Bake for 15-18 minutes, depending on how runny you like your egg yolks.
- Remove from oven and allow to cool for 2 minutes in the pan before lifting out.
- Serve sprinkled with fresh parsley.
