While healthy and hearty, many soups and stews require a lot of chopping. Here’s a hack to speed things along.

We love this hack. It saves time and energy and makes it more likely you’ll cook something healthy, even mid-week.

All you have to do is pre-chop your mire-poix and freeze it in freezer bags, ready to go when the mood takes you.

So what’s a mire-poix?

It’s the base of onion, celery and carrot, typically in a 2:1:1 ratio of those ingredients, which is a fundamental French culinary aromatic blend. This is gently sautéed to provide a savory foundation for soups, stocks, and stews.

So have a chopping session one weekend – even better, use your food processor – bag up several portions and freeze them. The next time you’re making a soup or stew, just toss them straight from the freezer into the pan and you’re half-way there!
