Serves 10 or more

Ingredients

  • 1 small banana, diced
  • 100g strawberries, diced
  • 1 apple, peeled, diced
  • 1 pear, peeled, diced
  • 1 teaspoon honey
  • 4 sheets frozen puff pastry, thawed
  • 1 egg, lightly beaten
  • 2 teaspoons caster sugar
  • icing sugar, to dust

Method

1. Preheat oven to 220C. Line two baking trays with baking paper.

2. Combine banana and strawberry in a bowl. Combine apple, pear and honey in another bowl.

3. Cut each pastry sheet into eight triangles. Place 1/2 tablespoon of strawberry mixture on half of triangles. Brush edges with water and fold to enclose. Repeat with remaining pastry and apple mixture. Place triangles onto prepared trays. Brush pastry with egg and sprinkle with caster sugar. Bake for 10 minutes, until puffed and golden. Serve dusted with icing sugar.
