Ingredients
- 75g baby spinach or wild rocket leaves
- 100g green beans, trimmed and blanched
- 1 bunch asparagus, trimmed and blanched
- cracked black pepper, to taste
- balsamic vinegar, to serve
Method
Toss rocket with green beans and asparagus spears. Serve with cracked black pepper and a drizzle of balsamic vinegar. Goes brilliantly as a side to baked poached or pan fried salmon fillets.
