Ingredients

  • 75g baby spinach or wild rocket leaves
  • 100g green beans, trimmed and blanched
  • 1 bunch asparagus, trimmed and blanched
  • cracked black pepper, to taste
  • balsamic vinegar, to serve

Method

Toss rocket with green beans and asparagus spears. Serve with cracked black pepper and a drizzle of balsamic vinegar. Goes brilliantly as a side to baked poached or pan fried salmon fillets.
