This paste is delicious served as part of a cheese platter.

Ingredients

  • 750g plums
  • Juice of 1 large or two small lemons
  • finely grated rind ½ lemon
  • pinch of ground cloves
  • ¼ teaspoon ground cinnamon
  • 1 cup water
  • sugar

Method

Place the plums, lemon juice, lemon rind, cloves, cinnamon and water in a saucepan. Bring to the boil, stirring occasionally, and cook until the plums are very tender about 30 minutes.

Pour the mixture into a colander that has been placed over a large bowl. Push the mixture through until basically only the pips remain in the colander.

For each cup of the resulting pulp, add ¾ cup of sugar. Bring back to the boil, stirring constantly. Cook over a medium heat for about 40 minutes, stirring often, or until a paste-like consistency is reached. Pour into small warm, sterilised jars and seal immediately.

Yield: about 450ml.
