Ingredients
- 500 g Salmon Fillet
- 500 g Gnocchi
- 250 g Cherry Tomatoes
- 2 tbsp Capers
- 2 tbsp Kalamata Olives (Roughly Chopped)
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Parmesan Cheese (Grated)
Method
Preheat oven to 180C. Place salmon in baking dish then scatter the dish with tomatoes, olives, capers and oil, season. Bake for 25 minutes. Cook gnocchi according to packet instructions. Mix tomato and olive mixture with gnocchi. Serve salmon fillets atop of gnocchi and tomato mixture with grated parmesan.
