Ingredients
- 2 tsp Honey
- 1 tsp Dijon Mustard
- 3 tbsp Extra Virgin Olive Oil
- 2 tbsp Lemon Juice
- 2 Pink Lady Apples (Cored & Finely Sliced)
- 2 Red Witlofs (Rinsed)
- 100 g Rocket
- 85 g Pecorino Cheese (Shaved)
Method
Combine honey, mustard and oil in bowl, whisk. Add lemon juice to apple slices, coat well, drain excess juice into dressing. Place witlof and rocket in serving bowl, scatter with pecorino, apple and drizzle dressing.
