Ingredients for the dough
- 250g plain flour
- 200ml water (or half water and milk) just warm
- 2 tablespoon olive oil
- 1 teaspoon sugar
- ½ teaspoon salt
- 2 teaspoons dry active yeast

Mix the yeast sugar and warm water and leave to stand for about 10 minutes. Then add oil. Pour into dry ingredients and mix until you have a smooth mixture. Knead the dough for at least 5 minutes. Cover the bowl with a wet tea towel and let it rest for 30 minutes (or until doubled in volume) in a warm place.
Sprinkle the dough with flour and spread it evenly into a 300mm diameter baking tray. (Or substitute a bought pizza base.)
Ingredients for the topping
- 100-200g Curdly or Capris cheese
- pinch salt
- freshly ground pepper
- 4-6 fresh or dried figs, cut into wedges
- 2 red onions, sliced
- 100g finely sliced speck or chopped bacon
- 2 tablespoon marjoram
- 1 tablespoon olive oil
Method
Crumble the cheese over the base, season with salt and pepper. Put the other ingredients evenly on top. Sprinkle with olive oil. Bake in an oven preheated as high as it will go, then cook for about 12 minutes until crust is browned. Serve immediately.
