Two couples, all vegetarians, who like to go out, find they do not have a great deal of choice in Hobart and decide to do something about it. Almost a year after this decision is made Sirens vegetarian restaurant opens in Victoria Street, Hobart. It takes that long because Charlotte Boss-Walker, Barry Dickson, Tracie Acreman and Martin Haywood outfitted the restaurant in its exotic Arabian Nights look themselves.
Barry, a carpenter, set up a workshop and everyone helped make chairs and tables and sew the soft furnishings. Now that Sirens has been open and running a year, they are still a very hands-on team. Barry grows herbs for the restaurant in his garden and makes some of the dips, Tracie and Charlotte make the cakes and pastries and Charlotte works front of house.
When you eat at Sirens, you are asked to turn off your mobile phone, and, if you should be wearing a military uniform, to cover it with a jacket provided.
“We want dining at Sirens to be a complete experience,†says Charlotte. “You come here to relax and be free of those sorts of things.â€
“Sirens welcomes you to an oasis, where the flavours, politics and beliefs of the world meet to excite, challenge and refresh,†is the sign that greets you on arrival at Sirens.
As much as possible, Sirens chefs source local, organically grown products. Last spring, this bruschetta recipe was popular, and it will be back this year with the broad bean season.
