Fifteen years ago I was asked to present a chicken dish in 5 minutes for my first audition for television. This is what I made – and it’s still delicious.
Ingredients
- 4 boned chicken breasts
- ½ cup thickened cream
- 1 tablespoon light flavoured vegetable oil
- 15-25g butter
- 2 teaspoons pink peppercorns (optional)
- 2 firm nectarines
- 1 tablespoon brandy
Method
Remove skin from chicken and flatten with a meat mallet. Heat oil and then butter in heavy based pan on moderate heat. Place chicken in pan and cook for about 1½ minutes until golden brown. Turn. At this stage, add quarters of nectarine. Cook for another 1½ minutes.
Pour on brandy and quickly ignite. Add seasonings and cream. Serve immediately.
Nectarine could be substituted with apple, mango, asparagus or mushroom.
