Because the best of them are around together for only a few weeks – which in our part of the world coincides with Christmas – berries a special summer treat. And Tasmania has the best berries in Australia – berries are no tropical fruit and they’re all the better for being chilled in winter.
Raspberries, strawberries and blueberries go well with mascarpone, thick cream, soft cheeses, honey, balsamic vinegar, sponge cakes and liqueurs such as Kirsch and Grand Marnier, but they go particularly well with each other, especially with some blueberries to contrast with the red raspberries and strawberries. Mix them in a summer pudding, a tart or just put them all together in a big bowl.
Remember, that unlike stonefruit, apples or pears, berries do not ripen after they are picked, so select those that are evenly red or blue, but not too coloured, which indicates they are overripe and will not last very long. Strawberries can be notoriously difficult to select – the biggest and prettiest are not always the sweetest, but with raspberries and blueberries, eye appeal is a more reliable guide.
Because they are cool-climate fruits, berries keep best, covered, in the fridge, and if you want to wash them, leave it until the last moment before eating.
