Ingredients
- 1 BBQ Chicken
- 3kg leeks, roughly chopped
- 3kg kennebec potatoes, peeled & diced
- 2kg spring carrots, scrubbed & roughly chopped
- 1tbsp crushed garlic
- 50ml olive oil
- 1Ltr chicken stock
- 1 packet Hokkien noodles
Fry off the garlic with the leeks and carrots until the leeks are soft. Add the potatoes and cook for about 2 minutes, add the stripped chicken meat and stock and simmer until the potatoes are fully cooked. Adjust the seasoning and add the noodles.
