Serves 8

Ingredients

  • 1 BBQ Chicken
  • 3kg leeks, roughly chopped
  • 3kg kennebec potatoes, peeled & diced
  • 2kg spring carrots, scrubbed & roughly chopped
  • 1tbsp crushed garlic
  • 50ml olive oil
  • 1Ltr chicken stock
  • 1 packet Hokkien noodles

Fry off the garlic with the leeks and carrots until the leeks are soft. Add the potatoes and cook for about 2 minutes, add the stripped chicken meat and stock and simmer until the potatoes are fully cooked. Adjust the seasoning and add the noodles.
