Ingredients

  • Doz Eggs
  • 6 Rashers Bacon
  • 1 Onion
  • 2 Tomatoes
  • 1/2 Eggplant
  • 1 Red Capsicum
  • Handfull of fresh Italian Parsley
  • 2 Sheets Puff Pastry

Method

Preheat the oven to 180 degrees. Dice the capsicum, tomatoes, eggplant and bacon and set aside. Crack the 12 eggs into a large bowl and whisk until lightly bubbled. Lightly grease a pie dish and place one sheet of pastry inside. Place all the diced ingredients into the dish and pour over the egg mixture. Roughly chop the Italian parsley and sprinkle over the top. Season the pie with some salt and pepper. Put the top sheet of pastry on the pie and trim around the edges. Brush with a little milk and place in the oven for about 45 minutes or until the pastry has gone a nice golden brown colour.
