Tasty and nutritious! Choose a gluten-free rice pasta from our fabulous range of Orgran or Casalare pastas. This recipe uses black beans, commonly known as turtle beans. They need to be soaked overnight and take about 40-60 minutes to cook on a gentle simmer.

Ingredients

  • 250g packet of Casalare or Orgran gluten free pasta
  • 200g ripened tomatoes
  • 2 green shallots, sliced
  • 2 cloves garlic, crushed
  • 1 fresh red chilli, chopped
  • 1/4 cup drained, sliced, sundried tomatoes
  • 1/4 cup olive oil
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons tomato paste
  • 1/2 cup water
  • 1/3 cup (cooked weight) black beans
  • 1/4 teaspoon grated ginger
  • 1 green shallot extra, chopped
  • salt and pepper to taste

Method
Add pasta to large pot of boiling water and cook according to instructions on packet, drain.

Heat oil in wok or pan, add chillies, garlic, sun-dried tomatoes, shallots, basil, ginger and beans, stir-fry for one minute. Add pasta, gently stir-fry until hot.

Blend or process tomatoes until smooth, add to wok with paste, water, stir-fry until hot. Season and serve sprinkled with extra shallots.
