Serves four
Ingredients
- 2 cups self-raising flour
- 1/2 teaspoon baking powder
- 2 tablespoon caster sugar
- 2 free-range eggs
- 1/2 cup milk
- 1 cup mixed berries
- 1 litre Lucaston Park apple juice
Method
Food process all ingredients until smooth. Add one cup fresh mixed berries and stir through gently. Pan fry in a little butter. Stack and drizzle with apple syrup and a generous dollop of double cream. For the apple syrup put a litre of Lucaston Park organic apple juice in a saucepan and simmer and reduce apple juice until it is thick and syrupy.
