Ingredients

  • 50ml olive oil
  • 2 tbsp garlic
  • 6 Lamb shanks
  • 3 tbsp tomato paste
  • 3kg vine ripened tomatoes
  • 2 large onions - diced
  • 2 red capsicum - diced
  • 2kg pink eye potato - diced
  • 2kg zucchini - grated
  • 1/2 bunch fresh oregano
  • salt & pepper
  • Method

    Fry off the garlic with the onion in the oil until soft and translucent. Add the tomato paste and allow to cook through. Turn the heat down and add the whole tomatoes cored. Add the oregano and cook until the tomatoes have collapsed.

    In a baking tray, lay the lamb shanks so they are all flat. Pour over the tomato sauce. Add the raw potatoes and capsicum. Cook for about two and a half hours at around 150 degrees Celcius. Remove the tray from the oven and stir through the zucchini and add some salt and pepper. Cook for another 30 minutes or until tender.
